Soft & Chewy Lemon Cookies

Ingredients

  • 1 ½ cups all-purpose flour

  • ½ tsp baking powder

  • ¼ tsp baking soda

  • ¼ tsp salt

  • ¾ cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 2 tbsp lemon zest (from about 2 lemons)

  • 1 tbsp lemon juice

  • 1 tsp vanilla extract

  • ½ cup sour cream


For the glaze (optional):

  • 1 cup powdered sugar

  • 2 tbsp lemon juice

  • 1 tbsp milk


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

  3. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-5 minutes.

  4. Add the eggs, one at a time, mixing well after each addition. Then, add the lemon zest, lemon juice, and vanilla extract, and mix until combined.

  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  6. Stir in the sour cream, ensuring the dough is smooth.

  7. Using a tablespoon or cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

  8. Bake for 10-12 minutes or until the edges are lightly golden and the centers are set.

  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

  10. For the glaze (optional), whisk together the powdered sugar, lemon juice, and milk in a small bowl until smooth. Drizzle over the cooled cookies.
