♡Red Velvet Cookies♡

Valentines Day is a time when treats and gifts are given to friends, family, and partners. These frosted red velvet cookies are a simple and delicious way to personalize these gifts to your loved ones. These can really be made for anytime of the year but I like to think that they are especially nice during this season.


Cookie Recipe

1/2 cup of unsalted melted butter

2 eggs

1 tsp vanilla

15.25 oz box of red velvet cake mix

Frosting Recipe (for me halving this is enough for all the cookies)

1/2 cup softened unsalted butter

8 oz softened cream cheese

1 tsp vanilla 3.5 cups powdered sugar

sea salt to taste


Step 1

Mix the melted butter, 2 eggs, and vanilla together. This can be done with a stand mixer or by hand. I prefer a stand mixer but this recipe is simple enough to mix by hand.



Step 2

Add in the box of red velvet cake mix and mix until just combined. Scrape the side and then mix one more time. This will end up being a fairly sticky texture. If you ended up buying a box of cake mix that is a little less than 15.25 oz (I got one around 13 oz), you can add a little bit of flour to make up for the extra few oz (I added around 1-2 Tbsp). once the batter is all mixed but the batter into the fridge to chill for around 30 mins. While the dough is chilling, preheat the oven to 350 degrees and line a baking pan with parchment paper.


Step 3

After the dough is done chilling, take a spoon or an ice cream scoop and create balls around 1 Tbsp. Place them on the baking sheet and lightly press down the tops so they don't puff up as much in the oven. Place the cookies in the oven and bake from 9-11 minutes. Once out of the oven, I like to lightly press down the tops again just to make sure the tops are flat.



Step 4

Now time for the frosting! Like I said above, I can usually halve the ingredient amounts and still have more than enough for all the cookies. Cream the butter and cream cheese together until smooth and fluffy. After that and in the vanilla, salt, and powdered sugar. Once all of the cookies are cooled off, it's time to frost! I put the frosting in a piping bag to create little hearts on top of the cookies but these can always be frosted normally with a knife or offset spatula. Once you're done piping, the cookies are ready to enjoy!
